Wheat Attu

Wheat Attu is a quick and easy recipe made with whole wheat flour, rice flour, herbs and spices.

Yield - 8

Ingredients
  • 1 cup Wheat flour

  • 2 tbsp Rice flour

  • 1 Egg

  • 2 Green chilies, finely chopped

  • 1/2 tsp Red chili powder

  • Salt as needed

  • 1/4tsp Ginger garlic paste

  • 1 tbsp Coriander leaves, chopped

  • 3-4 Curry leaves, chopped

  • Water as needed

  • Oil for frying

Method
  • In a mixing bowl, add wheat flour, rice flour, egg, chopped green chili, red chili powder, salt, ginger garlic paste, chopped curry leaves and coriander leaves.

  • Add water as required, using a whisk mix it well with no lumps. The batter has to be flowing and thin like dosa batter.

  • Heat the pan on a medium high heat. You can sprinkle few drops of water and check if it is hot and ready.

  • Stir the batter in the bowl and pour a ladle full of batter in the center of the pan.

  • Immediately begin to spread it evenly starting from the center in a circular way in clockwise direction to make a thin crepe.

  • Once the base becomes golden or crisp, then flip and cook the other side.

  • Cook the second side also till crisp and with some golden spots.

  • Serve wheat dosa immediately with chutney of your choice.
