Christmas has always been my favorite Holiday of the year and Christmas Plum Cake is my most favorite Holiday Cake.
Christmas Plum Cake is a rich, moist and delicious cake loaded with dry fruits and nuts.
The preparation for this Cake starts a month before Christmas, which starts with soaking the dry fruits and nuts. This soaking step can be done a month before Christmas and the baking of the cake will be done a few days before Christmas. You can soak the dry fruits for overnight and bake the cake next day. When the dry fruits are soaked for a long time, they absorb the liquid and become plump. When baked, some of the liquid oozes out of the cake batter, resulting in a moist cake.
So when you soak fruits ahead of time, you get a better cake, moist and with the flavors infused.
Ingredients
1/4 cup Cashew nuts
1/4 cup Almonds
1/4 cup Black raisins
1/4 cup Dried Cranberries
1/4 cup Walnuts
1/4 cup Pecans
1/4 cup Tutti fruity
2 cups Silver Rum
Method
Chop all the dry fruits and nuts into small pieces.
Add them into a clean dry glass jar.
Add rum and mix well.
Seal the jar with a lid and keep it in a cool, dry place.
Note:
You can add in any dried fruit of your choice.
Make sure you use only glass or ceramic jars to soak the fruits. Any other container may react with alcohol and could be harmful.
