Here is a spicy and tangy rice recipe for Ugadi made with raw mango.
Ingredients
1.5 cup Cooked rice
1 raw Mango, grated
3 tbsp Cooking Oil
1 tsp Cumin seeds
1 tsp Mustard seeds
1 tbsp Chana dal
3 - 4 Red chilies
4 - 5 Green chilies, slit
3 tbsp Peanuts
3 tbsp Cashew nuts
1/4 tsp Turmeric
1 Sprig Curry Leaves
Salt to taste
Method
Heat oil in a pan, add mustard seeds, cumin seeds, chana dal, red chilies, green chilies, curry leaves, peanuts and cashew nuts. Sauté for a minute.
Add grated mango, salt and turmeric powder. Stir and fry for a few minutes.
Now add in the cooked rice and mix it thoroughly. Adjust the seasoning if needed.
Raw mango pulihora is ready to serve.
