Qubani ka meetha

Qubani is an urdu word for apricot. Qubani ka meeta is a traditional Hyderabadi dessert made using dried apricots. It tastes best when served with Ice cream or thick custard.

Yield - 6 servings

Ingredients:

  • 2 cups Dried apricots, soaked overnight

  • 1/2 cup Sugar

  • 3 cups water

  • Vanilla ice cream to garnish

  • Apricot seeds to garnish

Method:

  • Wash and soak the apricots in water overnight.

  • De-seed the soaked apricots and then transfer them into a pressure cooker.

  • Add 3 cups water, cover with a lid and pressure cook over medium flame for one whistle.

  • In the meanwhile, break open each apricot seed shell. Discard the shells and keep the nut like apricot kernel aside.

  • Once the pressure is released, open the pressure cooker lid and let it cool a bit.

  • Transfer the apricots into a blender and pulse it once.

  • Take a non stick pan, add the apricot mixture along with sugar.

  • Cook on medium flame for 15 - 20 minutes stirring occasionally.

  • Turn off the flame once it reaches the desired consistency and let it cool down completely.

  • In a serving bowl, add qubani ka meetha, top it with vanilla ice cream and garnish with apricot kernels.Serve immediately.
