Qubani is an urdu word for apricot. Qubani ka meeta is a traditional Hyderabadi dessert made using dried apricots. It tastes best when served with Ice cream or thick custard.
Yield - 6 servings
Ingredients:
2 cups Dried apricots, soaked overnight
1/2 cup Sugar
3 cups water
Vanilla ice cream to garnish
Apricot seeds to garnish
Method:
Wash and soak the apricots in water overnight.
De-seed the soaked apricots and then transfer them into a pressure cooker.
Add 3 cups water, cover with a lid and pressure cook over medium flame for one whistle.
In the meanwhile, break open each apricot seed shell. Discard the shells and keep the nut like apricot kernel aside.
Once the pressure is released, open the pressure cooker lid and let it cool a bit.
Transfer the apricots into a blender and pulse it once.
Take a non stick pan, add the apricot mixture along with sugar.
Cook on medium flame for 15 - 20 minutes stirring occasionally.
Turn off the flame once it reaches the desired consistency and let it cool down completely.
In a serving bowl, add qubani ka meetha, top it with vanilla ice cream and garnish with apricot kernels.Serve immediately.
