Creamy Garlic Salmon

Creamy Garlic Salmon is restaurant quality salmon in a creamy sauce made with spinach, sun dried tomatoes and Parmesan cheese.

Ingredients

  • 3 Salmon fillets, cut into pieces

  • 2 tbsp Olive Oil

  • 2 tbsp Butter

  • 4 Garlic cloves, minced

  • 1.5 cups Cherry tomatoes, halved

  • 1 cup Heavy cream

  • 1 tbsp Red Pepper flakes

  • 1 tsp Dried Basil

  • Freshly ground Black pepper

  • Salt to taste

  • 2 cups Spinach

  • 1/2 cup Parmesan cheese, grated

Method

  • Season the salmon fillets on both sides with salt and pepper.

  • Heat Olive oil in a skillet, place the seasoned salmon.

  • Let it cook over medium heat for 1-3 minutes, flip the salmon to cook the other side.

  • Remove the salmon to a plate and keep warm.

  • To the same skillet, add butter. Once melted, add minced garlic. Cook for a minute.

  • Add cherry tomatoes, fry for 2 minutes.

  • Reduce heat to low, add the heavy cream and let it cook for 2-4 minutes, stirring often.

  • Season the cream sauce with salt, black pepper, red pepper flakes and dried basil.

  • Let the cream cook for another 2-3 minutes.

  • Add in the spinach and allow to wilt in the sauce.

  • Now add in the cheese and allow the sauce to cook for a minute until cheese melts through.

  • Add salmon fillets back into the pan and spoon the sauce over the top of the fillets.

  • Serve warm over rice, pasta or mashed potatoes.
