It's World Chocolate Day, so let's celebrate with this Chocolate Souffle.
Ingredients
For Souffle
3 tbsp Butter
2 tbsp Cocoa powder, unsweetened
3 oz Chocolate chips, semisweet
1/2 tsp vanilla extract
2 Egg yolks
2 Egg whites
2 tbsp Sugar
pinch Salt
pinch Cream of tartar
For Sauce
1 tbsp Butter
1/3 cup Sugar
2 tbsp Cocoa powder, unsweetened
1 tbsp all-purpose flour
1/2 cup Milk
1/2 oz Chocolate chips, semisweet
Method
Heat oven t0 375 F.
Use 1 tbsp of the butter to grease two 8-ounce ramekins. Coat the ramekins with the cocoa powder, tapping out the excess.
Microwave chocolate chips and remaining butter. Stir occasionally until smooth.
Add in vanilla extract.
Whisk in the yolks one at a time until smooth.
Now add Cocoa powder, mix well and keep aside.
In a mixing bowl, beat the egg whites with the sugar, salt, and cream of tartar until stiff peaks form.
Gently fold the egg-white mixture into the chocolate. Spoon into the ramekins.
Bake for 10 - 12min until risen with a slight wobble.
Prepare the Sauce while the Souffle is being Baked
In a small saucepan, melt butter over medium-high heat.
Add Sugar, Cocoa powder and flour. Stir well with a whisk.
Gradually add milk, stirring well with a whisk.
Bring to a boil and cook for 1 minute, stirring constantly with a whisk.
Remove from heat and add Chocolate chips stirring until smooth.
Serve Souffles immediately with the warm Chocolate Sauce.
