This colorful Chickpea salad is combined with cherry tomatoes, cucumbers, onions, bell pepper, cilantro and chickpeas all tossed in an easy homemade garlic lemon dressing.
Yield: 2 servings
Ingredients
For dressing:
3tbsp Olive Oil
3tbsp lemon juice
2 Garlic cloves, minced
1/2 tsp salt, or to taste
1/4 tsp Ground black pepper, or to taste
1/4 tsp Crushed red pepper, or to taste
For Salad
1 cup Chickpeas, cooked
1 Red bell pepper, chopped
1/2 Red onion, chopped
1 Cucumber, chopped
1 cup Cherry tomatoes, halved
1/4 cup Cilantro, chopped
Method:
For the dressing, in a jar combine Olive oil, lemon juice, minced garlic, salt, ground black pepper and crushed red pepper. Whisk well to combine.
In a large mixing bowl, toss together chickpeas, bell pepper, red onion, cucumber, cherry tomatoes and cilantro.
Pour dressing over the salad. Toss to combine.
Add grilled chicken & it is completely optional.
Serve immediately or cover and refrigerate. Enjoy cold or at room temperature.
