Homemade Cake Rusk with Chai, a perfect combination. It is one of the most popular Indian tea-time snack. They are crunchy, buttery and Cardamom flavored.
Ingredients
3/4 cup All Purpose Flour
1/4 cup Wheat Flour
1 tsp Baking Powder
1/4 tsp Baking soda
Salt, a pinch
1 cup sugar, powdered
1/4 tsp Cardamom powder
3 Eggs
1/2 tsp Vanilla Extract
1/2 cup Butter, room temperature
Method
Preheat oven to 350F. Grease a 8-inch square pan with oil or line it with a parchment/baking paper.
In a bowl, sieve all purpose flour, wheat flour, baking powder, baking soda, cardamom powder and salt. Keep it aside.
In a large mixing bowl, add butter and sugar. Beat till it becomes smooth and creamy.
Add in the eggs, one by one and beat the whole mixture till it comes to a smooth consistency.
Add in the vanilla extract and mix.
Now add the dry ingredients slowly into wet ingredients. Beat for 2 minutes till it looks smooth.
Pour the batter into the prepared pan.
Bake the cake for 25-30 minutes.
Remove from oven and let it cool for 10 minutes. Cut the cake into half and then cut the each half into thin slices.
Preheat the oven to 300F, line a baking tray with parchment paper.
Place the cake slices on the baking tray, leaving some space between them.
Bake for 10-12 minutes, flip the rusks to bake the other side.
Put the tray back into the oven and bake again for 10-12 minutes until they look golden brown.
Allow the cake rusk to cool completely.
Once cooled, the rusks will be crunchy and crispy.
Store them in an airtight container.
